Fruity Peanut Butter French Toast

This recipe serves one, but it can be easily doubled (or tripled or quadrupled etc!) depending on how many people you are serving.

Ingredients:

  • 1 large egg
  • 2 slices of wholegrain bread
  • Peanut butter
  • 1-2 handfuls of berries
  • 125ml pot of yoghurt

Instructions:

  • Whisk the egg and soak the slices of bread in this on each side
  • Fry on each side for 2-3 minutes (until they turn a light golden colour)
  • Spread peanut butter between the 2 slices and pour about 1/3 of the yoghurt (1 tbsp)
  • Top with the remaining yoghurt, berries (or other fruit of choice), you could also sprinkle some nuts or seeds on top for extra taste and nutritional value
