Quick Tuna Stir-Fry

Ingredients (serves 2):
1 medium onion
1 courgette
1 large carrot
1 tbsp cooking oil – I used vegetable (rapeseed) oil
2 nests of noodles
2 tbsp sweet chilli sauce
2 tbsp soya sauce
2 x 145g tins of tuna (I used tuna in sunflower oil)
Chilli flakes to taste
Handful of fresh coriander
Method:
- Chop the vegetables into thin strips roughly 2 inches long – you can also used whatever vegetables you have in the firdge, or frozen or pre-chopped stir-fry mix for extra convenience
- Heat the oil in a pan over a medium heat then add the vegetables and stir-fry
- Meanwhile, boil the kettle and start cooking the noodles as per the instructions on the packet
- After a few minutes, when the vegetables have began to soften add the sweet chilli, soya sauce, chilli flakes & drained tins of tuna
- Stir in the noodles once they are cooked (you can also used leftover cold noodles and heat them in the pan at this point)
- Serve topped with fresh coriander and enjoy!
