Quick Tuna Stir-Fry

Ingredients (serves 2):

1 medium onion

1 courgette

1 large carrot

1 tbsp cooking oil – I used vegetable (rapeseed) oil

2 nests of noodles

2 tbsp sweet chilli sauce

2 tbsp soya sauce

2 x 145g tins of tuna (I used tuna in sunflower oil)

Chilli flakes to taste

Handful of fresh coriander

Method:

  1. Chop the vegetables into thin strips roughly 2 inches long – you can also used whatever vegetables you have in the firdge, or frozen or pre-chopped stir-fry mix for extra convenience
  2. Heat the oil in a pan over a medium heat then add the vegetables and stir-fry
  3. Meanwhile, boil the kettle and start cooking the noodles as per the instructions on the packet
  4. After a few minutes, when the vegetables have began to soften add the sweet chilli, soya sauce, chilli flakes & drained tins of tuna
  5. Stir in the noodles once they are cooked (you can also used leftover cold noodles and heat them in the pan at this point)
  6. Serve topped with fresh coriander and enjoy!
