Heart Healthy Chowder

Ingredients:
- 500ml milk
- 320g fish pie mix
- 1 medium onion
- 1 leek
- 1 large potato
- 1 clove of garlic
- 100g frozen peas
- 1 tsp vegetable oil
- 1 tsp dried thyme
- 500ml vegetable stock
- Black pepper to taste
- Handful of parsley
Instructions:
- Put the fish pie mix in a large pan with the milk & stock, bring to the boil, then reduce the heat to simmer
- Dice the onion, leek and potato, crush the garlic.
- Sauté the onion, garlic, leek & vegetable oil on a medium heat for about 5 minutes (until they start to soften), mix in the potato and cook for a further 2-3 minutes.
- Add the onion, leek and potato to the pan with the fish in it, along with the peas, thyme and black pepper. Simmer for 15 – 20 minutes until the fish and potato are fully cooked.
- Garnish with parsley and it’s nice to serve it with some bread.
