Heart Healthy Chowder

Ingredients:

  • 500ml milk
  • 320g fish pie mix
  • 1 medium onion
  • 1 leek
  • 1 large potato
  • 1 clove of garlic
  • 100g frozen peas
  • 1 tsp vegetable oil
  • 1 tsp dried thyme
  • 500ml vegetable stock
  • Black pepper to taste
  • Handful of parsley

Instructions:

  • Put the fish pie mix in a large pan with the milk & stock, bring to the boil, then reduce the heat to simmer
  • Dice the onion, leek and potato, crush the garlic.
  • Sauté the onion, garlic, leek & vegetable oil on a medium heat for about 5 minutes (until they start to soften), mix in the potato and cook for a further 2-3 minutes.
  • Add the onion, leek and potato to the pan with the fish in it, along with the peas, thyme and black pepper. Simmer for 15 – 20 minutes until the fish and potato are fully cooked.
  • Garnish with parsley and it’s nice to serve it with some bread.
