I’m not a fan of boring lettuce-based salads (sorry lettuce!), but I really enjoyed this tasty salad.
To make this a more complete meal it’s a good idea to serve it with some grains – like couscous, quinoa, bulgar wheat or rice.
- 1 head of broccoli (steamed)
- 1/2 punnet of tomatoes
- 1 x 400g tin of lentils
- 1 x 200g packet of feta
- 1/2 pack mixed nuts & raisins
- For dressing: lemon juice, olive oil and balsamic vinegar
