Chicken and Vegetable Fried Rice

This quick and easy recipe serves 3-4 people.
Ingredients:
- 250g cooked rice (boiled or microwaved is fine)
- 2 eggs
- 1 large onion
- 1-2 cloves of garlic
- 2 handfuls of frozen peas
- 2 handfuls of frozen spinach
- 2 handfuls of frozen mixed vegetables
- 2 handfuls of mixed nuts
- 2 chicken fillets or 250g of vegetarian-style chicken pieces
- 1 tbsp of vegetable oil
- 2 tbsp reduced salt soya sauce
Instructions:
- Heat the oil in a wok or sauce pan
- Chop the onion and crush the garlic – then add this to the heated oil and sauté for 1-2 minutes until the onion softens
- Add the chicken (or vegetarian chicken alternative) and stir-fry this until it is fully cooked
- Add all of the frozen vegetables and cook for 3-4 minutes
- Then add the rice, nuts and soy sauce and stir-fry for another 3-4 minutes
- Crack the 2 eggs onto this and cook this for another 1-2 minutes
