Creamy Smoked Salmon Pasta

Ingredients:
- Wholegrain pasta
- 1 large onion
- 2 cloves of garlic
- 1 cup (160g ) of frozen peas
- 120g of smoked salmon
- 1/2 packet (80g) of cream cheese
- 3 tbsp of natural yoghurt
- Pepper
- 1 tbsp of lemon juice
- Optional topping: grated parmesan, chopped parsley and pumpkin seeds
Instructions:
- Chop the onion, garlic and cut the smoked salmon into strips
- Boil the pasta (roughly a large handful per person) for 10 – 12 minutes
- While the pasta is cooking, fry the onion and garlic in the olive or rapeseed oil for 1-2 minutes, then add the salmon and peas and cook for 3-4 minutes
- Once the pasta is cooked, add the cooked onion, salmon and peas to the pasta then stir in the cream cheese, yoghurt, lemon juice and pepper to taste
- Top with grated parmesan, parsley and pumpkin seeds (optional)
